Is there anything better in the winter than a steaming cup of hot chocolate? Try this adult treat for a cold winter night. Here are some hints for choosing your chocolate:Natural Cocoa Powder: It is non-alkalized unsweetened cocoa. You get a intense chocolate flavor. You will need to add sweetener.This is my favorite.Dutch Processed Cocoa Powder: Cocoa beans have been alkalized to reduce bitterness. It is smoother and the chocolate flavor is less intense. You will need to add sweetener. Chocolate Bar: for the richest hot chocolate, melt a good quality chocolate bar; 57% is a good intensity; use 2 oz. This creates a velvety cup of cocoa. Avoid chocolate chips; they have additives that may affect texture.Hot Chocolate or Hot Cocoa Mix: This is cocoa powder with milk and sweetener already added. This is the easiest, since you only need to add water or 1/2 water/1/2 milk. For a vegan hot cocoa, use vegan cocoa powder and any type of milk that you like. I love coconut milk. You can use whatever sweetener you like when you choose cocoa powder vs a mix. Cane sugar, coconut sugar, stevia, or honey all work. Just be sure to stir until completely melted.

- Place milk, cocoa, spices, and sugar in a saucepan on medium heat and whisk to combine. Allow to simmer until steaming and sugar is melted (tiny bubbles around the edge; do not boil)
- Add tequila
- Run through a fine mesh strainer into two mugs
- Garnish with a cinnamon stick and cinnamon whipped cream
